Ingredients
For the Chicken:
2 to 4 chicken breasts
Your favorite BBQ seasoning rub, to taste
2 tbsp avocado oil
For the Skillet:
½ lb Yukon gold potatoes, sliced into ½-inch pieces
2 cups corn
¼ cup purple onion, thinly sliced (reserve 1 tbsp for topping)
1 small jalapeño, seeded and thinly sliced (reserve ½ tbsp for topping, optional)
½ cup chicken broth
½ to ¾ cup BBQ sauce
1 cup cherry tomatoes, halved
Salt & pepper, to taste
For Topping:
½ cup shredded cheddar cheese
Chives and/or cilantro, for garnish




Instructions
1. Preheat & Season the Chicken
Preheat your oven to 375°F. Generously season the chicken breasts with BBQ rub and let them sit for 30 minutes to enhance flavor.
2. Sear the Chicken
In a large ovenproof skillet, heat avocado oil over medium-high heat. Sear the chicken for 3 to 4 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
3. Cook the Potatoes
Reduce the heat to medium-low. Add the potatoes to the skillet and cook for 5 to 7 minutes, stirring occasionally, until they are slightly tender.
4. Sauté the Vegetables
Add the corn, purple onion, and jalapeño to the skillet, cooking for 2 minutes until the corn is slightly browned. Stir in the cherry tomatoes, then deglaze the pan with chicken broth. Stir in the BBQ sauce until well combined.
5. Assemble & Bake
Return the seared chicken (along with any juices) to the skillet. Sprinkle with cheddar cheese, the reserved purple onions and jalapeños. Cover the skillet and bake for 10 to 12 minutes, until the cheese is melted and the sauce is bubbling.
6. Broil & Serve
Uncover the skillet and broil for 3 to 5 minutes, until the cheese is golden and slightly crispy. Garnish with chopped chives and/or cilantro, then serve immediately.
