Ingredients
For the Chicken Marinade:
3 tablespoons smoked paprika
2 tablespoons chili powder
1 tablespoon cumin
Juice of 2 limes
Juice of 1 orange
For the Fajitas:
½ lb chorizo, casings removed and formed into links
2 chicken breasts, sliced
1 red onion, thinly sliced
1 bell pepper (any color), sliced
1 small zucchini, sliced
2 to 3 Roma tomatoes, quartered
2 tablespoons avocado or olive oil
Salt & pepper, to taste
Tortillas, for serving
Fresh cilantro & lime wedges, for garnish


Instructions
1. Marinate the Chicken
In a medium bowl, whisk together the smoked paprika, chili powder, cumin, lime juice, and orange juice. Add the sliced chicken, ensuring it is fully coated. Cover and refrigerate for at least 2 hours, preferably overnight, for maximum flavor.
2. Cook the Chorizo
Heat a large cast-iron skillet over medium-high heat. Add the chorizo and cook until browned and cooked through, about 5 to 8 minutes. Transfer to a plate, leaving the pan drippings in the skillet.
3. Sear the Chicken
In the same skillet, add 1 tablespoon of oil and increase the heat to high. Add the marinated chicken, cooking for 4-5 minutes per side until fully cooked and slightly charred. Remove and set aside with the chorizo.
4. Sauté the Vegetables
Reduce heat to medium. Add the remaining 1 tablespoon of oil to the skillet. Toss in the onions and peppers, sautéing for 2-3 minutes until slightly softened. Next, add the zucchini and Roma tomatoes, and cook for another 2 to 3 minutes.
5. Assemble & Serve
Return the chicken and chorizo to the skillet, stirring everything together to coat in the flavorful pan drippings. Remove from heat.
