2. Brown the Meat & Sauté the Vegetables: Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and ground beef, breaking it up with a spatula. Add the diced onion, bell pepper, and minced garlic. Cook until the meat is browned and cooked through, about 7-10 minutes. Drain off any excess grease—I did not drain enough—oops!
3. Build the Sauce: Adjust the temperature to medium-low. Stir in the tomato paste and cook for 1 minute to concentrate the flavors. Pour in the red wine, scraping up any browned bits from the pan. Sprinkle in the Italian seasoning blend and season with salt and pepper to taste. Let it simmer for about 5-7 minutes to slightly reduce.
4. Adjust the Sauce: If the sauce looks too thick, stir in the reserved pasta water a little at a time until the consistency is silky and coats the back of a spoon. Adjust seasonings, as needed.
5. Toss and Serve: Add the drained pasta directly into the skillet and toss to coat in the sauce. Add a little more pasta water if needed to help everything cling together beautifully.
