1 tablespoon olive oil
2 Andouille sausages, sliced
1 small onion, diced
1 bell pepper (red or green), diced
2 celery stalks, diced
3 cloves garlic, minced
1 cup dry lentils (green or brown), rinsed
1 (14.5 oz) can diced tomatoes
4 cups chicken or vegetable broth
1 teaspoon smoked paprika
1 teaspoon Cajun seasoning (or more to taste)
½ teaspoon dry thyme
½ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper (optional for extra heat)
1 bay leaf
1/2 tablespoon Worcestershire sauce
1 tablespoon hot sauce (optional)
1 cup chopped scallions (for garnish)

Instructions:
Sear the Andouille:
Heat olive oil in a large pot over medium heat.
Add sliced Andouille sausage and cook until browned (about 3-4 minutes). Remove and set aside.
Sauté the Aromatics:
In the same pot, add onion, bell pepper, and celery. Cook for 3-4 minutes until softened.
Stir in garlic and cook for another 30 seconds.
Simmer the Soup:
Add lentils, diced tomatoes, broth, smoked paprika, Cajun seasoning, thyme, black pepper, cayenne (if using), bay leaf, Worcestershire sauce, and hot sauce.
